This wine is deep ruby color, the nose display blackcurrant, black cherry and black plum with sweet spice. On the mouthfeel is ripe black fruit with full-bodied, rich and concentrated, and fine grain tannins texture, follow is dark chocolate on the palate with sweet spice finish.
The grape is sourced from Quarry Vineyards; the Cabernet Sauvignon block is between 300 and 400 feet elevation in the eastern foothills of Rutherford. Planted in 1981, the volcanic “Tufa” soil in combination with ‘Grace Family’ clone selection and St. George rootstock, produce intensely flavored small clusters with concentrated small yields.
The harvest time is between 4 – 10 October 2010 with 24.9 -26.0 brix level and 3.6-4.1g/l total acidity, followed by fermentation in small open top fermenters and hand punch down, , then aged 31 months in French oak 35% new.
